Today for lunch I whipped up a little batch of pimento cheese.  It’s one of those foods that is a staple in the south.  For those of you that are unfamiliar with pimento cheese, it is a mix of cheddar, monterey jack, and cream cheese held together by mayonnaise and then sprinkled with salty little chopped bits of pimentos.  You can use pimento cheese for much more than just sandwich.  Here are a few suggestions:

  • Stuff it in hard boiled eggs (like deviled eggs)
  • Stir into mashed potatoes for cheesy potatoes
  • Stuff it in jalapenos poppers for a quick appetizer
  • Spread on a panini with bacon or ham
  • Drop a dollop into an omelet
  • Mix with diced avocados and put it in a quesadilla with grilled chicken
Pimento Cheese
  • 1 (3-ounce) package cream cheese, room temperature
  • 1 cup grated sharp cheddar
  • 1 cup grated Monterey Jack
  • 1/2 cup mayonnaise
  • 1/2 teaspoon House Seasoning, recipe follows
  • 2 to 3 tablespoons pimentos, smashed
  • 1 teaspoon grated onion
  • Cracked black pepper
Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended.
House Seasoning
  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.
